Ayurvedic Vegan Chia Seed Pudding
Chia Seeds - Super simple to make ! Chia Seeds are an excellent source of omega-3 fatty acids, rich in antioxidants, and they provide fibre , iron, and calcium. Omega-3 fatty acids help raise HDL cholesterol, the "good" cholesterol that protects against heart attack and stroke
- 1/2 cup unsweetened canned coconut milk
- 1/2 cup unsweetened almond milk
- Honey or Agave to taste (optional)
- 2 teaspoons vanilla extract
- 1/8 teaspoon salt
- 1/4 cup white chia seeds
PREPARATION (serves 2-4 portions)
Stir the coconut milk, almond milk, sweetener, vanilla, together. Whisk in the chia seeds until evenly dispersed. Cover.
Refrigerate overnight to thicken so the chia seeds to and become translucent.
Garnish with a blended fruit puree if your are not on non-fruit days of The Cleanse
Chia pudding can be made the night before and refrigerated for up to 3 days
