Breakfast Coconut Dahl

This breakfast dahl is ideal for during cleansing days and for all year round

Its simple and really nourishing, quick and easy to make

Ingredients

  • 1 cup of daal lentils (get the split light coloured one or what you have in the cupboard)

  • 1 can of coconut milk or use coconut milk from a carton

  • 1 cooking apple peeled, cored and chopped

  • 3 tablespoons of ginger chopped finely

  • 1 tablespoon of tumeric (add as much as you like to taste)

  • sprinkle in some cinammon

  • Lime or lemon juice

  • Garlic!  (2 cloves optional)

  • Add any dried fruits (raisins, cranberries, prunes you choose)

Add all the ingredients into a pot and bring to the boil, reduce the heat and simmer for about 30 mins or so.  If needed add more coconut milk or water.  You can also add rice to the ingredients just make sure you add water as well, so 1 cup of rice would need about 2 cups of water.

Garnish with blueberries or other fruits if you are not on non-fruit days of The Cleanse
