Ayurvedic Buddha Bowl

 

Buddha bowls are one bowl of yummy food, often for a casual lunch or dinner.  Use what you have in the fridge and larder, there are no rules and create yourself a delicious combination of nourishing food.  This one is quinoa,avocado spinach and roasted pumpkin

INGREDIENTS

 
  • Roast a whole pumpkin, chop into small pieces when cold and store in the fridge to be added to buddha bowls and quinoa mixes whatever you are making during the week
  • slice a fresh ripe avocado
  • quinoa prepare to the instructions, use vegetable stock to cook rather than water for added flavour you can store it in the fridge for a few days
  • a handful of fresh spinach
  • a small handful of raisens
  • mix olive oil with the juice of a lemon for the dressing
  • sprinkle any seeds you may have in the cupboard over the top of the salad- pumpkin, sesame etc (if you are cleansing you may not be able to have the seeds depending on which day you are on)

PREPARATION

Take a wide bowl and add each ingredient, top with seeds if you choose and add the dressing
