Fresh Carrot Salad with a Thai twist

 

Tasty carrot salad with thai inspired flavours a great side or starter

INGREDIENTS

 
  • 4 tablespoons Thai fish sauce
  • 2 limes juiced
  • 1/4 cucumber finely sliced into strips
  • 2 shallots sliced finely
  • 1 or 2 red chillis sliced depending on your preference
  • 3 carrots grated or spiralised
  • 2 x 50g vermicelli noodles soaked to instructions on pack
  • handful of chopped mint

PREPARATION

In a large bowl add the fish sauce, lime juice, cucumber, shallots and chillies and leave to infuse for a good five minutes then, add the carrots, drained noodles and mint and toss everything together and serve
