Chia seed & tumeric pancakes

 

This recipe makes approximately eight delicious pancakes perfect for a healthy breakfast.  The chia seeds which are related to the mint family are packed with protein and fibre and an excellent source of omega-3 fatty acids.  Chia means "strength" in Mayan

INGREDIENTS   Serves 2-4 people 8 pancakes

 
  • 3 Eggs whisked

  • 3/4 cup almond milk

  • 1 tsp tumeric

  • 1 tsp vanilla extract

  • 1/2 cup of flour (coconut or wholemeal)

  • 1/2 teaspoon baking powder

  • pinch of sea salt

  • 2 tablespoons of chia seeds

Honey or maple syrup to serve

 


PREPARATION

In a large bowl add the chia seeds and the almond milk and leave to soak overnight if possible or until the seeds expand.

Combine all the ingredients together to make a small batter, add the flour in gradually so as not to create lumps.

Grease a large pan and place over a medium heat.  Once the pan is hot use a ladle or squirty bottle to pour out each pancake, cook on each side for 2-3 minutes

I serve mine with honey or maple syrup - delicious!
