Fabulous Freekah Salad

This dish is quick and easy to prepare and will keep for 4 days in the fridge in a sealed container.  Use it as a side dish or add to wraps for a healthy lunch.

 

Serves 6 - 8 people as a side dish

  • 4 cups of cooked Freekah or Freekah/Quinoa Grains

  • 6 medium tomatoes chopped very small

  • 4 spring onions chopped finely or 1 red onion

  • 1 red pepper chopped finely

  • 1 handful of mint chopped finely

  • 1 handful of fresh mint chopped finely

For the dressing

  • olive oil (your best) and juice of 1 lemon

Cook the freekah to the instructions on the pack and allow to cool, you can cook with a vegetable stock cube if you like more flavour in the grain.

Chop all the ingredients finely and then combine with the grain.  Add the olive oil and lemon to your taste, season with salt and pepper.
