Tapioca amazing high fibre high protein dessert

 

Make tasty healthy desserts with tapioca

Tapioca is made from the cassava plant root and is sold with other pulses in dried form.  To use tapioca you need to soak it well before cooking.  You can soak it in heathy milks to make tasty low calorie high protein desserts.

When the pearls as they are known are soaked they rehydrate and absorb the liquid becoming translucent and swollen. 

Tapioca is an amazing food rich in dietary fibre, HDL or good cholesterol,
and protein. It also contains vitamin B-complex, including pantothenic acid,
folate, and B6, as well as iron, manganese, calcium, copper, and selenium.

The photo shows tapioca which was soaked overnight in coconut milk and then gently simmered and served...tasty!
